Form into a ball. If desired, roll in parsley flakes or chopped nuts and then chill. Serve with you favorite crackers and let the fun begin! <br /><strong>   <br />  Microwave Caramel Popcorn</strong>   <br />  3-4 quarts of popped corn (approx. 4 snack size bags of microwave popcorn) <br />  1 cup brown sugar <br />  1 stick of butter <br />  1/4 cup light corn syrup <br />  1/2 teaspoon salt <br />  1/2 teaspoon baking soda <br />  large paper grocery bag <br /> <br />  Pop the corn. Place in the paper bag and set aside. <br /> <br />  Combine sugar, butter, corn syrup, and salt (NOT THE BAKING SODA YET!) in a large microwave-safe bowl. Cook on high in the microwave until butter is melted and mixture comes to a boil. Mix completely, then microwave an additional 2 minutes on high. <br /> <br />  Remove from microwave and stir in baking soda. Mix well. Mixture will form tiny bubbles and lighten in color. Mix well. <br /> <br />  Pour the syrup over the corn in the paper bag. Stir a bit with a long handled spoon to get it going. Then close the bag and shake it around a while to mix well. <br /> <br />  Put bag into the microwave and cook on high for 2 more minutes. If it won’t fit in the microwave, you can skip this step and it will still be good.  <br /> <br />  Give it one final mix and then pour it out into a huge bowl on onto a cookie sheet and let it cool.
